Recipe for Organic Chicken Cooked in Traditional Cider

Chicken is justifiably one of the best loved meats thoughout the whole world.
It is almost fat
free, high in protein, extremely versatile and is the key ingredient in many diet recipes. If you can buy an organic chicken, do so, as it will be free from any hormones or other unhealthy additions. It Is also a great idea from the animal welfare point of view, as most of the grocery store chickens are forced to live in conditions that are quite terrible.


If you are not worried about weight loss, there is no need to fret, there is more to chicken than low fat recipes. However, most recipes that include chicken will be, broadly speaking, better for you than similar recipes prepared using alternative meats.

Here is a basic recipe that will satisfy your family and friends.

To prepare this recipe, you will need:

One organic chicken (approximately 3.5 lb)
Two cupful of apple cyder
6 Fresh Apples (pared and quartered)
salt (as needed)
pepper (as needed)
1 teaspoon cornstarch
1/2 cupful of whipping cream
1 Tbs of lemon juice
1/3 cupful of butter
Two T. of olive oil
1/4 teaspoonful ground cinnamon (not obligatory)
Four scallion onions, (chopped well)
Two dried cloves
1/4 teaspoon ground ginger
1 sprig of parsley, (chopped well, for the garnish)
1/2 teaspoonful thyme
Two teaspoons of sugar




Method:

Wash the Organic Chicken and dry it well.
Mix a small amount of pepper and salt and rub it into the organic chicken (both inside and out)
Drizzle the lemon juice over the pieces of apple.

Take a large frying pan or skillet and melt half the butter then mix in the oil.
Put half of the apple pieces into the pan and cook gently for 5 minutes (until they have browned a little)
Mix in the ground ginger and stir well, cooking a little longer to allow the ground ginger to release it's flavour.
Stuff the apple mixture into the chicken and close-up the chicken by tying or by threading with a skewer.

Slowly melt the rest of the butter in the pan and then put the organic chicken into the frying pan and quickly brown the outside of the chicken, making sure it browns equally all over.
Transfer the chicken to a big oven ready casserole dish with a tight fitting lid.
Take the remaining apples, the scallion onions, ground cinnamon, thyme, cloves and sugar and add them all to the frying pan.

Cook for a couple of mins then add the apple cyder and increase the heat to start the mixture boiling.

Once the cyder is at boiling point, pour it over the chicken in the casserole dish and cover the pot with foil or waxed paper before placing the lid on the pot.

Put it into the oven and cook for about 45 minutes at 200C/400F

When the chicken is ready, put the chicken onto a heated platter whilst you prepare the cider gravy.

Skim and remove any fat from the pot and then increase the heat, boiling the liquid away until there is only one cup remaining.

Add the cornstarch and cream, and stir constantly till it reaches a nice creamy consistancy.
Add salt and pepper to taste, and then pour over the chicken

Toss some of the parsley over the top, and serve.

To make the meal into a healthy and well balanced meal, you may want to add a vegetable side dish of cauliflower or grilled mushrooms and carrots.
